Low Carb Seafood Salad

I have a confession...

I LOVEimitation crab meat. Ya know the stuff in California rolls? Lined up at cheap buffets labeled "crab". Vacuumed sealed processed goodness. Mmmm!!!
I picked up a pack one random day at the grocery and it sat in my fridge foreverrrr. That was fine though because it has a pretty long shelf life being fake and all.
I know it goes against everything I normally stand for in food. I don't like pre-made | manufactured foods. I truly think if God didn't make the ingredients, we shouldn't eat. But, we all have something, right?
So, it was nearing it's expiration date and I loathe throwing away food that wasn't used, so I put it to use.
For whatever reason, I was craving a seafood salad. The mayonnaise-y type, not the cruciferous type. I hopped on Pinterest to find inspiration and developed my own recipe.

Doesn't that look good?!? Did I mention it's only 5 | five | cinco ingredients?
Yeah, I thought that would perk you up.
All you need is 8 oz (1 package) of imitation crab meat, avocado oil mayonnaise, dill weed (not to be confused with cannabis weed,lol), a wee bit of tangy ranch, and a splash of lime juice.
Mix it all together in one bowl, let it chill in the fridge (after a taste test), and then mangiare!

This will yield about 1 1/2 cups and each serving size is about 1/4 cup. You should get 5ish servings from this.
And, as the title says, it's low carb. 1 serving is 5.9 net carbs.
**I used My Fitness Pal (MFP) to calculate macros but please check with your preferred nutrition calculator if you feel it necessary. **
Enjoy this with a lite salad, cheese whisps, or if you're non-keto, club crackers. This seafood salad makes a great mid day snack!
