Keto Friendly Chipotle Chicken

I'mmmmmm baaaaack! After a bit of a hiatus to gather some mental clarity and re-energize, I am ready to do some blogging!

Back in January, I made the decision to get healthy! I wanted to spend the last year of my 20's preparing myself for the next phase of life. It was time to take control of some negative behaviors, negative influences, set my sights on the Lord and my future.

I lost 15 pounds and have successfully kept it off but some old habits crept back in. Before I made the mistake of gaining all my weight back, I set out on a mission to find a way of eating that was healthy for everyone in my family. A way of life and not a diet.

I started researching ketogenic diets and was blown away by the results people saw, the whole food|natural food approach, and the lack of food restrictions. Eating KETO seemed effective AND attainable. Sooo, hubby and I decided to give it a shot.

We're 9 days in and ALREADY seeing results! We're not taking supplements, eating engineered shakes, or pouring powders in our water. We're simply eating whole foods while eliminating sugar (wah!) and carbs from our diet.

Not gonna lie, detoxing from sugar is no joke but it something we all need to do anyway.

Staying on track (for me) with KETO comes down to meal planning! I want to share a recipe I made that was delicious, easy, and a hit on Instagram!

Servings: 8 (1/2 cup each)

Prep Time: 10 minutes

Cook Time: 3 hours in Crockpot on HIGH

Ingredients:

1.25 lbs chicken breasts

1 cup low sodium chickenstock

1/2 T Adobo Sauce (from chipotle peppers)

1 Chipotle Pepper in Adobo Sauce

1 T Cumin

1 T Garlic Powder

1 t Chili Powder

Salt & pepper to taste

Combine all ingredients in crockpot and cook on HIGH for 3 hours. Shred chicken with two forks and put back in crockpot. Toss with juices. Turn crockpot to warm until ready to serve.

  • Protein-60.2 g

  • Net Carbs- 0.3 g

  • Fat- 2.8 g

  • Calories-281

Serving Suggestion:

Copycat Chipotle Chicken Salad

  • Lettuce, as much as needed

  • 1/2 cup shredded cheese

  • 1/2 avocado, cubed

  • 2 T salsa (I used Pace Mild Picante)

  • 1/4 cup sour cream

  • 1 Low Carb Tortilla (I used La Banderita, I think)
