Taco Tuesday Recipe Test

​It's Tacooooooo Tuesdayyyyy! Woot woot!

We LOVE tacos in our house. However, I try to only make them once a week (maybe less lately) because they aren't always healthy and the dreaded law of diminishing return.

What's that you say? Dang, she must be super smart you say? Nah girl, that's literally just the only thing I remember learning in college economics. Basically, it means that too much of a good thing is a thing.

I digress.

So, this week I didn't want to have regular ole tacos because I was feeling bored. Also, Spring Break is next week and I'm venturing to my momma's house.

Alone.

With two kids.

For 7 hours in the car.

AHHH!

Needless to say, I wanted this week's menu to be easy and not leave me with a fridge full of random food. I settled on taco pizza because well, a.) I've never made it, b.) who doesn't love pizza, and c.) it combines 2 of our favorite foods.

I found this recipe by Living Well Mom on Pinterest.

At first glance, it looked tasty and easy (ding ding). I was skeptical of the cream cheese/sour cream "sauce" though. Also, I'm never a fan of packets (taco, ranch, gravy, etc.). They're always full of preservatives and sodium and nine times out of ten it's just as easy to make them homemade. But for the sake of convenience, I chose to forgo my food snobbery ways.

My husband and daughter are food inspectors and I wasn't sure it'd jive with their preferences but my suspicions were wrong, they LOVED it.

I, on the other hand, wasn't crazy about it. Here's my thoughts:

Pros:

1. This was a QUICK meal. I mean start to finish in 20 minutes. Snip snap!

2. TACOS.

3. Simple ingredients, easily customizeable (I don't think that's a word but go with it).

4. Kids and husband approved!

Cons: 1. The cream cheese and sour cream mixture was super bland and a little too overwhelming. It calls for an entire block of cream cheese and 8oz of sour cream. That's A LOT folks.

Suggestion: halve that or omit it and replace with refried beans.

2. The recipe calls for 2 regular sized cans of crescent rolls (pinched together) and 1 lb of beef. Personally, there was not enough meat and too much bread.

Suggestion: I'd only use one can of crescent rolls next time and it'd still be plenty.

3. We had A LOT of leftovers. With the sour cream mixture already spread on, I'm not sure how good it'll be for lunch tomorrow. Major bummer!

Suggestion: only top the pizza you'll actually eat that night. Individually wrap up the leftovers for more pizza (or tacos) the next day.

Overall, it had yummy flavor and everyone liked it and said they'd definitely eat it again. With a couple tweaks, this could be a seriously delicious meal.
